We’ve tweaked the original Swedish recipe which uses raw salmon before adding a maturing brine of brown sugar, dill and pepper by very lightly smoking the salmon first. The result brings a decadently rich flavour to the Gravadlax which marries wonderfully with the subtle flavour of the dill.
